Chicken-Fricassee

This week’s recipe comes from our Dad’s side of the family. Although perhaps not a conventional fricassee, our grandmother’s version is a great weeknight meal. Over the years this recipe has evolved and apparently now even includes Mrs. Dash seasoning (Don’t try to argue with your abuela about this). Its simplicity and short prep time are its best qualities, but don’t be fooled, this chicken is packed with tons of juicy flavor. Serve with white rice and use the caramelized onions to garnish.

Ingredients
  1. 6-8 chicken drumsticks
  2. 1 large yellow onion
  3. ¼ cup of Worcestershire sauce
  4. 1 tbsp Mrs. Dash Original Blend Seasoning
  5. 1 tsp garlic powder
  6. ½ tsp crushed pepper
  7. 1-2 tbsp vegetable oil as needed
Instructions
  1. Using a sharp knife and mallet, chop the drumsticks in two pieces. Make the cut at the thickest part of the drumstick so both sides are roughly the same size (one will just have a longer bone).
  2. In a large bowl season your drumsticks with all your dry spices: Mrs. Dash, garlic powder, pepper.
  3. Pour your Worcestershire sauce and make sure to completely mix and lather your chicken. Add extra sauce as needed.
  4. Let the chicken marinate in the fridge for at least 15 minutes, the longer the better.
  5. Slice the onion into narrow slices and set aside.
  6. In a “Caldero” or large sauce pan place 1 to 2 tbsp of vegetable oil and set to high.
  7. Make sure the oil is hot, and sear the chicken. You want to make sure to evenly sear the skins by turning the pieces on each side. This usually takes approximately 10 minutes depending on how hot your oil is.
  8. Once your chicken is a nice dark brown color, slide the pieces to the sides of the pan and drop your onions in the center.
  9. Sautee the onions until they begin to caramelize. Slide the chicken on top of the onions if they are in danger of getting burned.
  10. Once your onion is fully caramelized cover the saucepan, and set to low. The chicken will need another 5 to 10 minutes to fully cook throughout. Use this time to prepare your white rice and greens to finish your meal.
